Orange Almond Salad

Prep Time: 10 minutes
Dressing ingredients:
¼ cup canola oil
2 Tbsp. white vinegar
2 Tbsp. sugar
½ tsp salt
Dash cayenne pepper
Salad ingredients:
Green leaf lettuce
Chopped green onion
1 can mandarin oranges, drained
Slivered almonds, browned in oven
Mix dressing ingredients in tight container and shake. Combine salad ingredients and toss with dressing. This makes a LOT of dressing so use sparingly.
This was wonderful. I loved it & my kids loved it. I added some poppy seeds to the dressing because it just sounded good and I sugared the almonds (3Tbsp. of sugar mixed with the almonds in a skillet over medium heat, stirring constantly for about 3 min). I also used sliced almonds since that is what I had. This salad was perfect for this warm day and will be great to eat in the summer.
